Protein Basque Cheesecake
serves: 6-8 people
calories: Around 1200-1300 calories and 60-70 grams of protein for the whole cheesecake
Ingredients:
2 eggs
1 block of cream cheese softened to room temp.
½ cup sugar*
½ cup of greek yogurt
1 scoop of protein powder, your choice of flavor
Around 1 tsp of vanilla extract
¼ cup of either blended cottage cheese or sour cream depending on your preferences**
1 tbsp flour of your choice
A pinch of salt
Steps:
Preheat the oven to 400 degrees F, and line a 6 inch pan, preferably springform, but a regular cake pan will work as well, with parchment paper.
Beat the cream cheese with the sugar until smooth, then add the eggs and combine thoroughly.
Mix in the greek yogurt, protein powder, vanilla extract, and a pinch of salt into the batter until smooth.
Fold in the flour and the sour cream or blended cottage cheese, and pour into your pan.
Tap the pan on the counter to get rid of excess air bubbles, and place in the oven for 25 minutes until the top is golden brown and the middle has not fully set.
Turn off the oven and let the cheesecake cool for about an hour before removing it and putting it in the fridge for a minimum of 3 hours. Make sure to leave the door ajar when cooling.
Cut into slices and serve to friends and family!
Tips:
*Sugar helps the basque burnt cheesecake caramelize and contributes to the texture so it is not recommended to leave it out. You can try to substitute with healthier options, but just know that it may not turn out perfect.
**You can also go the traditional way and opt for heavy cream, this is just a slightly more protein rich and healthier version. If you have a sweet tooth, I would recommend heavy cream.
