Spicy Mayo Shrimp Rice with Side Salad
serving size: 1 dish (8-12 shrimp, 2/3 cup rice)
recipe makes: 2-3 dishes
Ingredients:
Shrimp (frozen)
Seasoning: sesame seeds, black pepper, chili flakes, salt
Spicy Mayo sauce
Garlic cloves, crushed
White onion, diced
Mixed Greens or other greens
Brown rice or white rice or basmati rice, 3 cups
Vegetables of choice
Steps:
Defrost Shrimp (if frozen) by putting in large bowl with room temp water and dash of salt; be sure to check and replace water periodically
Cook rice (if needed)
Prep dish(es) with mixed greens, approximately 1/5 - 1/4 of dish volume
Heat medium sized pan and coat with olive oil; add generous amounts of garlic (the equivalent of 6-8 cloves, crushed) and let simmer
When garlic is crispy, add white onion, 1 and 1/2 cups, and season lightly with black pepper and salt
As onions caramelize, cook other vegetables of choice in separate pan (see: tofu halloumi salad for how to cook mushrooms, zucchini, asparagus)
Upon full defrosting of shrimp, drain water in bowl; squeeze shrimp to release most of excess absorbed water; add to garlic and onion pan and season heavily with all seasonings to absorb flavor; add dash of water if needed
When shrimp has fully absorbed flavor and vegetables are done; take off heat
Add roughly 2/3 cup (or more, if desired) of rice to dishes next to side salad; add vegetables on side; pour shrimp, onion, garlic mixture onto bed of rice
Drizzle generously with spicy mayo on top
