Strawberry Vanilla single-serve Protein Pancakes

Ingredients:
1 egg
½ of a banana*
¼ cup of flour/ oat flour*
1 tsp baking powder
About ¼ cup of protein powder, should be about one scoop
2 tbsp milk or liquid as needed
STRAWBERRIES!!!
VANILLA! (yummy)
Maple syrup as needed for sweetness
Steps:
Prepare the batter: Mix together the flour, baking powder and protein powder
After that, mix in the wet ingredients: egg, banana, milk, vanilla, and if you want, you can even add the strawberries in at this stage to have them fully incorporated. If the batter is too lumpy, go ahead and throw it in a blender. If you want the batter to be sweeter, add some maple syrup.
Prepare the pan: Heat the pan on medium heat and add butter or oil
Make the pancakes: Scoop about ¼ cup of batter into the pan and wait for the edges to form bubbles, about 2 minutes. Add the strawberries if you haven’t already, and flip. Cook for 1-2 minutes more and repeat until there is no batter remaining.
Serve: Plate the pancakes and serve with more fresh strawberries, syrup, and a side of protein rich cottage cheese because it tastes good, especially with toppings.
Tips:
If you really can’t stand the taste of banana, switch to applesauce, but banana is recommended.
Oat flour is recommended over regular flour as it does contain more protein, but if you really can’t stand the taste, switch to regular flour.
